I ride a lot of freeway going back and forth to work.. 26 miles 1 way, I cruise at 75-80mph.. Is this to fast for the stock gearing?

You're worrying for no reason. Your bike will be just fine.

Should be able to run at redline for quite some time. As long as you have good oil in there.

Shouldn't be a problem at all. I do it all the time. This morning's work was 90 miles away. 80 made the commute much more tolerable.

For you it is if your bike is still leaking oil. Probably stay around 0 rpm until leak is fixed.
It's a Ducati racing motor. I'm inclined to believe it's built to run all day at high rpm. Probably a lot of people ride extended periods on highways at 90+ using an 821.

I cruised 85+ mph when I did almost 100 miles daily. Granted, I never rode without in-ear headphones, but never 'felt' the bike was working too hard between my legs. Bike runs much cooler at speed than urban stop and go, too.

80 is the sweet spot (which is more like 75 actual) cause the aero drag and buffeting above 80 increases dramatically (with the bags on). It's exhausting to do extended hauls 85+. This is not a streamlined GP bike. It's an up-right, shoulders in the wind stance. The front gets scary light the closer to 100 you go. Get above 90 and tug on the bars just slightly back and forth...feels like you have an old Cadillac's power steering system.
